Healthy Recipe Day - Creamy Cucumber Dip

Before anyone even asks, YES, I still follow the program after all these years. Six years to be exact. I feel that I still need to go and be part of that world, be anchored, be grounded. This is one of the recipes that I copied from the bulletin board at the meeting. It seems strange that something like this can be creamy and also good for you. Imagine all of the wonderful veggies that can be dunked in this dip! Enjoy!


Creamy Cucumber Dip
2 Cups lo fat plain yogurt
1/2 Cup reduced calorie mayonnaise
1 Teaspoon salt
1/2 Teaspoon ground cumin
1/4 Teaspoon cayenne pepper
1 1/2 cucumbers, seedless, English (apologies to other languages), diced
1/2 Cup red onion diced
6 Tablespoons mint leaves, fresh (as opposed to stale), chopped
6 Tablespoons dill, fresh, chopped

Stir together the yogurt, mayo, salt, cumin, and cayenne until smooth.

Add the cucumbers (I just had a deja vu moment there...really!), onion, mint, and dill (all of this is about 1/2 Cup per serving).

This recipe makes 8 servings.
2 Points per serving.

It sounds YUMMY! I love dips of all kinds, especially with assorted raw veggies. (OK: chips, too.)

The stories I could tell you about the reaction to low-fat ANYTHING in this house! The roommate wrinkles her nose in disgust at low or zero fat, claiming she can "taste the difference." If I want to keep something all to myself? I get the low-fat version.

She insists on using butter in EVERYTHING. Puts sour cream (full-fat) even on SWEET POTATOES. Eats Pringles with egg salad sandwiches (one Pringle with each bite of sandwich) AND the sandwich is made with LOTS of Hellmans (of course) AND butter on each slice of bread.

Are you feeling nauseaous yet? I am.

I wrinkle my nose in disgust at those who wrinkle their nose (and anything else) in disgust.

I haven't tried this recipe yet, but it sounds good, so let me know if you do try it.
